Beverage charged on Consumption

Beverage on consumption is a industry statement that basically means that all beverage that is used is charged to your account or tab. The cost will be charged at the caterers normal list prices and you will only be charged for what is used.

Remember to check the prices and also stipulate what charges are acceptable to you before the event. Where possible stipulate your requests in writing.
Some stipulations you may want to consider are:

  • Limit your beverage to NZ Beer, wine (wines that you choose only) and non alcoholic beverage like orange juice and soft drinks.  If you do not stipulate what you are paying for, your guests will take advantage of this and your bar tab will get out of control. (spirits, ports, liqueurs and cocktails will increase your tab dramatically)
  • You could put a dollar limit on your tab. ie $1000.00 and the caterer can advise you when this is reached and you may decide to increase your limit on the night or you can go to a cash bar to which your guests will need to pay for any drinks from there after.

Below is a brief calculation of how much money you will need to budget for your event.
(Remember these are only estimates based on years of experience, but there are many factors that will affect these calculations)

  • Work out the average cost of the wine that you want to serve. If the average price is $28.00. Then Budget $28.00 per person  for a dinner function.
